Smokin’ Oak Wood-Fired Pizza – the fastest growing wood-fired pizza franchise in the United States, has announced the opening of its first Sunshine State location. The new restaurant will be located at 13180 Cortez Blvd. in Brooksville, FL and will celebrate its grand opening on May 3. It will be a true family business, locally owned and operated by Rod and Cat Scott and managed by their adult children, Anthony and Brittany.
Rod Scott is a veteran and wounded warrior who, after 32 years of service in the military, decided to trade in his combat boots for a chef’s hat. In 2017, Rod retired from the military and enrolled in cooking school to pursue his lifelong dream of opening his own restaurant. Now a certified chef and pastry chef, Rod recognizes a high quality pizza when he sees one and was first intrigued by the franchise opportunity offered by Smokin’ Oak Pizza. After careful consideration, Rod and Cat decided that the brand met their high expectations for food quality and loved the added bonus of dining. They then set about bringing the concept to their local community in Brooksville.

This will be the first Smokin’ Oak Wood-Fired Pizza restaurant the Scott family intends to open, with plans for additional locations in the near future. The Brooksville location will house indoor and outdoor seating and a self-service Taproom. A large rolling door has also been installed which connects the interior and exterior patio space.
Smokin’ Oak Wood-Fired Pizza and Taproom offers an extensive menu of wood-fired pizzas, sandwiches, salads, entrees and even desserts. The oven, fueled by oak wood, reaches around 900 degrees and cooks pizzas in about two minutes. The brand provides an enjoyable pizza experience through the use of its open kitchen, which allows customers to customize and watch their pizzas being made right in front of them. The dough and sauces are homemade, the vegetables are cut throughout the day and even the meats are roasted in the wood oven to infuse the flavor of real oak wood. The restaurant is perfect for those in need of a quick lunch, but with the addition of the Taproom it is ideal for those who want to linger and enjoy all that the self-service wall of taps has to offer. .
The Taproom has a wall of self-service taps that offers beer, wine, and mixed drinks. To use the Taproom, a guest will start a tab, receive an RFID wristband, and then be free to explore the tap wall. Customers can pour between 1 and 16 ounces at a time, giving them the opportunity to try different wines, beers, ciders, and other drinks they might not otherwise have tasted. A taproom attendant will be available to answer any questions about using the tap wall and to provide recommendations.
